When dinner for two becomes dinner for four!
We planned to make this turkey dish from Sunbasket tonight but it only makes enough for two and we have house guests for the week. So, we improvise!
After a quick pantry/freezer inventory, I thaw out some ground chicken and slice up some Brussels sprouts, garlic, and onions.
I follow the Sunbasket instructions and pop the dish in the oven. Meanwhile, I cook up the chicken in a skillet with some za’tar spice, salt, pepper, and nutritional yeast. When that’s cooked through, I set aside, and sauté the onions and sprouts in a little olive oil with salt and pepper until tender.
By now, the oven timer is going off so I add the Sunbasket dish to the skillet, add about half the chicken, and stir to combine.
And, voila! Four servings AND leftover chicken 🍗
