We’d been craving pancakes but I’m really trying to reign in sugar and balance meals with carbs, proteins, and fats. This was my best effort!
2 ripe bananas
1/2 C steel cut oats
1/2 t salt
1 t cinnamon
2 T almond butter
2 T paleo mayo
Combine all ingredients in a blender and blend on low/medium until smooth, don’t over blend. Add avocado oil to a large pan and on medium heat. Once the pan is heated, spoon batter in 1/4 C measurements into pan and cook for 2 mins/side or until golden brown.
📝 Unripe bananas can be ripened in the microwave (45 secs) or oven (15 mins)
📝 Regular mayo can be subbed for paleo mayo
And for the topping…
8 oz fresh blueberries
1/2 C filtered water
2 T honey
Zest from 1 lemon
Juice from 1/2 lemon
Pinch of salt
1/2 scoop gelatin
Combine all ingredients except gelatin and bring to a boil. Reduce heat to medium/low and simmer for 15 minutes, or until blueberries break apart and topping begins to thicken. Remove from heat and stir in gelatin. Serve immediately.
📝 Topping will gel if cooled, serve warm
This made about 3 servings, we added toasted almonds to the pancakes and served them with sunny side up eggs and chicken apple sausage.
Husband review: Loved them but still wanted syrup 😆
