My mashed cauliflower recipe has survived many a Thanksgiving in place of mashed potatoes. My secret ingredient is white beans. They add texture and body to the cauliflower that can otherwise be thin and grainy when blended.
1 head cauliflower, rough chopped in large pieces
1 can white beans, rinsed and drained
2 T garlic, minced
1/4 C coconut milk (can omit or sub for other milk)
1 T olive oil
1 T bone broth
Salt and pepper, to taste
Steam cauliflower until tender (air on the side of harder than soft). Blend all ingredients until smooth. Served with butter or gravy.
