In my most recent @thrivemarket order, I bought a frozen poultry box from @Maryschicken. I’ve only made chicken wings once or twice but the order came with 3 packages of chicken wings, so I knew I needed to get some recipe ideas lined up. Here is the first one I tried:
16 chicken wings
2 T olive oil
Sea salt and pepper, to taste
1/4 C Dijon mustard
1/2 C apple cider vinegar
1 T honey
1/3 C coconut aminos
1 t white miso paste
Preheat Traeger to 500 for 10-15 mins. Rinse wings under cool water, pat dry, and toss with olive oil, salt, and pepper.
Place wings directly on grill grate and cook for 15 mins with lid closed, turn 2-3 times.
Decrease temp to 225 and cook for an addition 30 mins. While wings are smoking, prepare the sauce. Combine the remaining ingredients in a sauce pot, bring to a boil, reduce heat to a low simmer and cook for 10 mins. Remove from heat.
After 30 mins, remove the wings from the smoker and increase smoker temp to 350. Toss wings in sauce and return to smoker for an addition 10-15 mins.
For the sauce, either (1) make a separate batch for dipping, or (2) boil down remaining sauce from tossing wings for 1-2 mins at a rolling boil.
